Our History
The Garifuna culinary story begins in the 17th century, in Yurumein (Saint Vincent), when Carib peoples and free Africans created a unique cuisine based on cassava, casabe/ereba (cassava bread), coconut, plantain, and fish. Since then, every recipe has been both identity and journey: cassava as travel bread, and Indigenous and African techniques giving rise to dishes like machuca and hudutu.
In 1797, the Garifuna people were expelled from Saint Vincent and settled along the coasts of Honduras, Belize, Guatemala, and Nicaragua, carrying seeds, flavors, and ways of cooking with them. This is how classics such as tapado, coconut soups, and rice and beans became staples that still accompany celebrations and ceremonies.
In the 20th and 21st centuries, migration to the cities and to the United States brought this cuisine into new homes and restaurants. Today, Garifuna cuisine is both a living heritage and a contemporary offering: every ereba, every hudut, and every tapado invites you to taste a story of resilience, pride, and future.
